The “SANTOKU”, which translates in to English as either “three-purpose” or “three virtues”, gained this name because it is well suited to cutting meat, fish, and vegetables. The term “SANTOKU” also refers to the wide variety of ingredients that the knife can handle: meat, fish and vegetables, or to the tasks it can perform: slicing, chopping and dicing, either interpretation indicating a multi-use, general-purpose kitchen knife. “SANTOKU” is most often used for chopping, dicing, and mincing. Because of their precision edge, they’re especially useful for Julienning thin slices of vegetables and meats. The wide blade associated with a “SANTOKU” also makes it useful for scooping food off of a cutting board and moving to a Saute Pan or other dish.

How to sharpen with newspaper

Place the newspaper on a hard surface such as a cutting board.Place the knife blade on the newspaper with the blade facing you.With the sharp edge of the knife at a 15 degree angle, slide the blade from one side to the other.Apply force to the blade and sharpen firmly about 10 times until you hear a friction sound.Repeat the same number of times on the other side of the knife.
